Nick Lachey opens up on his Super Bowl traditions

Nick Lachey is having the "ultimate boys' week": He and a bunch of his friends are gearing up for Super Bowl Sunday in San Francisco after a ski trip to Lake Tahoe in California.
Lachey is also on radio row for a good cause; the Feeding America Entertainment Council member is working with young student chefs Taste of the NFL's annual Party with a Purpose on Saturday to help raise money for food banks across the country. We caught up with Lachey to see what he's up to and what he's excited for on Sunday.
What's it like on radio row?
It is madness, as you'd expect, but it's a lot of fun -- high energy.
Who are you hoping will win?
I don't really have a horse in this race, but I kind of want Peyton to be able to match Eli's two Super Bowl rings at Super Bowl 50. If Peyton wings, it's kind of a cool story. I'm rooting for him.
You're at the Super Bowl with PepsiCo for the Game Day Grub Match. What is that?
It's a competition with students from the Culinary Institute of America. The challenge was to come up with the perfect game day snack, but the recipe has to use three PepsiCo ingredients, and that's a lot more than just Pepsi -- there's Sabra hummus, Naked juices ...
The students have a lot to work with, and the winning group came up with a dim sum platter. I've been tasting a lot of things. They get to debut the creation tomorrow night at Party with a Purpose and they get some scholarships, tickets to the game and so it's a great project and a lot of fun.
What do you and your wife, Vanessa Lachey, serve at Super Bowl parties?
We always try to create a theme depending on where the Super Bowl is, like when it was in New Orleans, we had a cajun food truck come to the house. When it was in New York, we had a pizza truck come to the house. So we try to theme it on wherever the Super Bowl is that year.
There are a lot of big-name musicians who are playing on Sunday, and you yourself are a musician. Do you have anyone you're really excited to see?
Well, Coldplay. Everybody likes Coldplay, but I heard Bruno Mars may be part of this again, and I'm a big Bruno fan, so I'm looking forward to seeing that.
I interviewedyour wife in December and she told me your son, Camden, loves to sing.
He's definitely a singer. He loves to sing, and it's cool for me because I'm a writer, too, and he's starting to write lyrics to songs. He makes them up as he sings and it's cool to see your talents trickle down, so if he wants to be a singer one day that would be a lot of fun, but I'd be just as happy if he became a football player.
So as long as he's a singer or a football player.
Yeah, you know -- just one of those low-profile careers.
How do you divide time between your career and spending time with your family?
Your life changes after you have kids. It's all about the kids now and all about doing what's right for them as a parent and it's something you're glad to do, but we try and have a balance. She's working, I'm working -- whoever's got the time and I think we make a great team. This week, I'm up here having a guys' trip and she's at home taking care of the kids.
A guys' trip? Does that include your brother or any 98 Degrees bandmates?
It does not include them. I'm actually here with a bunch of buddies hanging out, so yeah, it's a boys' trip. We were in Tahoe earlier in the week doing some snowboarding and now we're at the Super Bowl, so it's the ultimate boys' week.
What other projects have you been working on?
I'm working on a TV project now, on the production side of things. It's a competition reality show I'm developing. I'm also working on getting back in the studio, working on new music. This past year I was working on a show for VH1, and that ended, so it's a good time to work on other stuff. Besides being a dad, that's kind of what I'm doing.
What is the upcoming album like?
I'm really going in next week, so I haven't even gotten into the studio and fleshed it out. I like to push a new project with a clean slate, so I'm not sure yet, but it's always exciting, so we'll see where I end up.
Nick Lachey: Daughter Brooklyn Is a 'Daddy's Girl,' Camden Is a Protective Big Brother
Lachey's in love! Nick Lachey recently opened up to Us Weekly about daughter Brooklyn's and son Camden's latest milestones.
"Brooklyn's teeth are coming in, and she’s standing, almost walking. It’s almost like clockwork. When they turn 1, this personality starts to happen," Lachey, 42, tells Us exclusively of his daughter, 12 months. "She’s becoming more of a daddy’s girl, which I obviously love. She’s such a happy, happy kid and just a lot of fun."
Lachey and his wife, Vanessa Lachey — who married in July 2011 — welcomed their baby girl in January 2015 and celebrated her first birthday last month in Mexico. Big brother Camden, 3, arrived in September 2012.
"Camden and I basically beat the crap out of each other and wrestle. It's our guy thing," Lachey, who recently teamed with PepsiCo’s Game Day Grub Matchculinary competition, adds. "The way [Brooklyn] looks at me is different. It’s very, very cool."
Half the fun of fatherhood for Lachey is seeing how his children interact. "She’ll basically crawl after him and chase him. He likes to torment her and hide her toys and make her find them — typical big brother stuff. And I try to warn him that one day she’s gonna grow up and get even with him, but I don’t think he understands that concept yet," the former boy-bander jokes of Camden. "He’s a good brother. He’s very protective, and if there is a situation where he thinks she’s in trouble, he’ll go and make sure I'm aware of it."
Lachey is infatuated with his children, but that doesn't mean he's ready for baby No. 3. "I’m pretty happy with two," he says. "It feels like God has smiled upon me."
Lachey is just as grateful for his longtime love, who he calls an "incredible" mother. Their schedules are hectic, but they try to go on "day dates" when time allows.
"Every now and again we’ll get a sitter and go out and have a nice dinner. Maybe catch a movie or something," he tells Us of the Truth Be Told actress. "Whether it's during the day or at night, we’re firm believers that you have to create some time for each other, and you can’t lose sight of that dynamic in your relationship."

Nick Lachey talks to us about PepsiCo’s Game Day Grub Match and his own Super Bowl snack cravings
Deciding which PepsiCo Game Day Grub Match snack was the tastiest might have been “the hardest thing he ever had to do.”
We spoke with Nick Lachey, TV personality and former 98 Degrees front-man, who was recently working with Pepsi in conjunction with its Game Day Grub Match contest that challenges culinary student teams to create the ultimate Super Bowl snack made with Pepsi products. We got Lachey to talk to us about his favorite Game Day snack, his own challenges in the kitchen, and thoughts on owning a bar with his brother.
The Daily Meal: Why did you decide to get involved with the Game Day Grub Match?
Nick Lachey: I’ve been involved with Feeding America for years now. This whole Grub Match thing culminates at the Super Bowl; the proceeds from that event go to food banks across the country. It’s a great way to celebrate the biggest sports weekend of the year.
What is your favorite Super Bowl food?
I’m definitely a pretzel guy. I got a chance today to try the winning dim sum platter and it was awesome. It was a chicken wing egg roll potsticker made with Cheetos, Sierra Mist, and pretzels.
What makes a great chicken wing?
I go for the bigger drumstick. It’s a little more meaty; you do all that work and you want to get good meat off of it. I like old faithful Buffalo sauce… you know, I think some people get a little too cute with wing sauces. In my younger days, I’d go to a place with my buddies and get the hottest thing on the menu and it was literally painful to eat. I can’t do that anymore!
Have you ever cooked with soda before like the Game Day Grub Match?
I have not, but I’m the first to admit that I’m not a professional cook… I’m a professional eater. The stuff I create in the kitchen is not the stuff of legends. It’s up on the website.
What are the challenges of operating a bar [Lachey’s in Cincinnati] with your brother?
I think you can plan for how it’s going to go, but until it’s open and you see what people’s likes and dislikes are, you literally have to open and be willing to adjust and change as you go through the first year; we just celebrated one year actually.
Have the other members of 98 Degrees been to the bar?
Justin’s office is 50 feet from the bar and he’s always there. (Laughs.) He may be here a little too much. Jeff has not, but he’s forgiven because he doesn’t live in Cincinnati.
When you were in 98 Degrees, did you and the guys have any weird pre- or post-show eating rituals?
It’s usually we’d eat post show… you don’t want to burp through your hour and a half set! When you’re on the road, you make do. A lot of times it was Chili’s or Applebee’s or one of those middle-of-nowhere chicken sandwich type places. I loved sourdough pretzels though. Those were probably the closest thing I had to a ritual.

Lachey’s Bar Spicy Buffalo Chicken Dip
Serves 10
1 lb. Grilled Chicken
1 lb. Sour Cream
⅔ lb. Cream Cheese
1 oz. Celery small dice
1 oz. Carrot small dice
4 oz. Blue Cheese Crumbles
1 ½ Tbsp Cajun Seasoning
¼ Cup Franks Red Hot Sauce
Pinch Cayenne Pepper
⅔ lb Shredded Cheddar
1 lb. Sour Cream
⅔ lb. Cream Cheese
1 oz. Celery small dice
1 oz. Carrot small dice
4 oz. Blue Cheese Crumbles
1 ½ Tbsp Cajun Seasoning
¼ Cup Franks Red Hot Sauce
Pinch Cayenne Pepper
⅔ lb Shredded Cheddar
1. Shred chicken.
2. Combine all ingredients in bowl and mix until well combined.
3. Heat at 350 degrees in serving dish for 6 minutes.
4. Serve with Ritz crackers and enjoy!
