Nick and Vanessa "gave heartfelt toasts and got a little choked up," says a source. "Nick talked about the journey they've been on and how much it meant to have friends and family celebrate with them." Afterward "there were some serious dance competitions throughout the night, which were hysterical! That's Nick and Vanessa's thing."
HOW SWEET IT IS
Guests enjoyed sliders, spring rolls and Ahi tuna – all prepared in Chef Gordon Ramsay's kitchen – capping off the night with sweetly monogrammed "N&V" cupcakes.
MEET THE IN-LAW Nick's mom, Cate Reinert, shared a hug with her son and future daughter-in-law. If Vanessa gets her way, Cate could soon be a grandmother! "I want three to four kids, so I know I gotta get started," Vanessa told PEOPLE.
GOING TO THE CHAPEL As the sun set over West Hollywood, Nick Lachey and Vanessa Minnillo (in Monique Lhuillier) celebrated their upcoming nuptials with 140 guests at a glamorous cocktail party on the rooftop of the London Hotel.
